Ingredients:
- Protein:
- 100g shrimp (peeled and deveined)
- 70g thinly sliced beef (optional)
- Vegetables:
- 1 small zucchini (sliced)
- 1/2 cup broccoli florets
- 1/2 cup cauliflower florets
- 1/2 cup baby carrots
- 1/2 cup spinach or leafy greens
- Noodles:
- 70g rice noodles or your preferred type
- Sauce & Seasoning:
- 1 cup coconut milk
- 1 tbsp vegan butter (e.g., shea butter, coconut oil, almond butter)
- 1 tbsp dried lemongrass
- 1 tbsp garlic (minced)
- 1 tbsp galangal (minced, alternative: ginger)
- 1 tsp chili flakes or paste (optional for spice)
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp dried sweet basil
Instructions:
- Prepare the Noodles:
- Cook the noodles according to the package instructions. Drain and set aside.
- Cook the Proteins:
- Heat 1 tbsp oil in a large pan or wok over medium-high heat.
- Sauté the beef slices until browned (2-3 minutes) and set aside.
- In the same pan, cook the shrimp until pink (2-3 minutes) and set aside.
- Stir-Fry the Vegetables:
- Add a splash of oil to the same pan if needed.
- Sauté garlic and galangal until fragrant.
- Add carrots, broccoli, and cauliflower; stir-fry for about 4-5 minutes.
- Add zucchini and cook for another 3 minutes.
- Pour in the coconut milk to lightly steam the veggies until tender.
- Combine & Season:
- Return the shrimp and beef to the pan.
- Add cooked noodles and vegan butter.
- Toss everything together until evenly coated. Adjust seasoning as needed.
- Serve:
- Garnish with fresh herbs or chili flakes if desired.
