Cooking

Ingredients

For the Pudding:

  • 1 cup silken tofu
  • 1/2 cup coconut milk (full-fat for creaminess)
  • 1 tsp vanilla extract
  • 1 tsp gelatin powder (as a firmer alternative)
  • 1 tsp water

For the Toppings:

  • 3 almonds (whole or chopped)
  • 2 cashews (whole or chopped)
  • 3 pumpkin seeds or sunflower seeds
  • 5 goji berries or raisins
  • 1 tsp coconut flakes
  • A drizzle of mixture of soy sauce and honey or maple syrup(optional)

Instructions

  1. Prepare the Pudding:
Blend the silken tofu, coconut milk, maple syrup, and vanilla extract in a blender until smooth.
  2. Activate the Gelatin:
In a small bowl, sprinkle the gelatin over 2 tablespoons of warm water and let it bloom for 5 minutes. Then, heat the bloomed gelatin gently over low heat or in the microwave for a few seconds until fully dissolved. Stir the dissolved gelatin into the tofu mixture.
  3. Set the Pudding:
Pour the mixture into individual serving bowls or a larger container. Refrigerate for 2-3 hours, or until the pudding sets and firms up.
  4. Prepare the Toppings:
Lightly toast the nuts and seeds in a dry skillet over low heat for 1-2 minutes to enhance flavor (optional). Let them cool.
  5. Assemble and Serve:
Top the chilled pudding with almonds, cashews, seeds, goji berries, coconut flakes, and a drizzle of mixture of soy sauce and honey or maple syrup. Serve immediately and enjoy!
