Crispy chips and nuts go well with the chunky smoothie made from lotus root powder. Can be made without yogurt or other dairy products.
Ingredients
- 1 tbsp water
- 1 cup almond milk (or any plant-based milk of choice)
- 1 ripe banana
- 1 tsp unsweetened cocoa powder
- 1 tsp olive oil
- 1-2 tsp maple syrup
- a pinch of vanilla extract
- dragon fruit chips
- mixed nuts
- coconut chips
Instructions
- Prepare the Lotus Root Paste:
- In a microwave-safe bowl, mix lotus root powder with water until evenly dissolved. Microwave the mixture at 600W for 30 seconds, then stir swiftly and thoroughly to ensure a smooth consistency, taking care to prevent the formation of lumps. Return the bowl to the microwave and heat at 600W for an additional 15–30 seconds, or until the mixture thickens into a silky paste. Allow it to cool slightly before use.
- If making with psyllium, immediately add all smoothie ingredients other than toppings to blender and mix.
- Blend the Smoothie:
- In a blender, combine almond milk, banana, cocoa powder, prepared lotus root paste, olive oil, vanilla extract, and maple syrup.
- Chill:
- Pour the smoothie into a serving glass or bowl.Let it chill in the refrigerator for about 10-15 minutes until it gets a pudding-like texture.
- Garnish:
- Top the smoothie with dragon fruit chips, assorted nuts, and coconut chips.
