Ingredients

  • 1/2 cup strawberries
  • 1 cup Greek yogurt or plant-based yogurt
  • 1/2 tsp honey or agave syrup
  • 1 tsp blueberry jam
  • 1/4 cup rolled oats
  • 1/2 cup spelt flour
  • 1/2 cup soy milk or plant-based milk
  • 1 whole egg(split into York and white)
  • 1 tbsp coconut oil(if necessary)

Instructions

  1. Make the Pancake Batter:
    • In a bowl, mix spelt flour, rolled oats, soy milk and egg york.
  2. Prepare the Meringue:
    • In a separate, clean bowl, beat the egg whites until they form soft peaks. Gently fold the meringue into the pancake batter, taking care to maintain the airy texture for fluffy pancakes.
  3. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil if necessary. Pour about 1/3 cup of batter for each pancake and cook until bubbles form on the surface and the edges start to set. Flip and cook until golden brown. Repeat with remaining batter.
  4. Warm the Blueberry Jam:
