Ingredients:

  • Protein:
    • 100g shrimp (peeled and deveined)
    • 70g thinly sliced beef (optional)
  • Vegetables:
    • 1 small zucchini (sliced)
    • 1/2 cup broccoli florets
    • 1/2 cup cauliflower florets
    • 1/2 cup baby carrots
    • 1/2 cup spinach or leafy greens
  • Noodles:
    • 70g rice noodles or your preferred type
  • Sauce & Seasoning:
    • 1 cup coconut milk
    • 1 tbsp vegan butter (e.g., shea butter, coconut oil, almond butter)
    • 1 tbsp dried lemongrass
    • 1 tbsp garlic (minced)
    • 1 tbsp galangal (minced, alternative: ginger)
    • 1 tsp chili flakes or paste (optional for spice)
    • 1 tsp cumin powder
    • 1 tsp coriander powder
    • 1 tsp dried sweet basil

Instructions:

  1. Prepare the Noodles:
    • Cook the noodles according to the package instructions. Drain and set aside.
  2. Cook the Proteins:
    • Heat 1 tbsp oil in a large pan or wok over medium-high heat.
    • Sauté the beef slices until browned (2-3 minutes) and set aside.
    • In the same pan, cook the shrimp until pink (2-3 minutes) and set aside.
  3. Stir-Fry the Vegetables:
    • Add a splash of oil to the same pan if needed.
    • Sauté garlic and galangal until fragrant.
    • Add carrots, broccoli, and cauliflower; stir-fry for about 4-5 minutes.
    • Add zucchini and cook for another 3 minutes.
    • Pour in the coconut milk to lightly steam the veggies until tender.
  4. Combine & Season:
    • Return the shrimp and beef to the pan.
    • Add cooked noodles and vegan butter.
    • Toss everything together until evenly coated. Adjust seasoning as needed.
  5. Serve:
    • Garnish with fresh herbs or chili flakes if desired.
