I think this recipe is useful when you don’t have much time, want to eat a little, or just want to eat some refreshing, healthy food. The only sweetness is natural pumpkin, and the only fat is the butter used in the bread and a little sesame paste.

Here’s a delicious recipe for Vegetable Sandwiches featuring a unique combination of ingredients including tomatoes, mashed raw pumpkin, lettuce, and a flavorful spread made from sesame paste, black pepper, chili pepper, and soybean sauce.

Ingredients

  • 2 slices of white wheat bread (or rice flour bread as your choice)
  • 1/4 cup raw pumpkin, mashed (peeled if you need)
  • 1 piece of thinly sliced tomato
  • 1 lettuce leaf, washed and dried
  • 1 tbsp sesame paste (tahini)
  • A pinch of black pepper
  • A pinch of chili pepper flakes
  • 1 tsp soybean sauce
  • 1 tsp soy milk or plant-based milk (to make it smoother)
  • Optional garnishes: sprouts, cucumber slices, or avocado slices

Instructions

  1. Prepare the Pumpkin Mash:
    • Peel the raw pumpkin if you need (I recommend not peeling them because they are richer in nutrients, but they will become bitter, so that’s your choice), remove the seeds. Microwave at 600W for 4 minutes or until tender in a pan. Mash the grated pumpkin using a fork or potato masher until smooth.
  2. Make the Spicy Sesame Spread:
    • In a small bowl, combine the sesame paste, black pepper, chili pepper flakes, and soybean sauce. Mix well and add soy milk until smooth enough to spread on bread.
  3. Assemble the Sandwiches:
    • Take the slices of bread and spread each one generously with the spicy sesame spread.
    • Layer the mashed pumpkin over two of the bread slices.
    • Add slices of tomato on top of the pumpkin.
    • Place a lettuce leaf on each sandwich.
    • If desired, add additional garnishes like sprouts, cucumber slices, or avocado.
    • Top with the remaining slices of bread.
  4. Serve:
    • If you want crispy, you can cook it on a hot plate or in a toaster.
    • Cut each sandwich in half and serve immediately for the best taste and texture.
